- 1/4 cup granulated sugar

- 1/2 cup whole milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, ground cinnamon, and nutmeg (if using). Whisk until well blended.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Gently mix until just combined; a few lumps are fine. The dough should be soft and slightly sticky.
- Cover the bowl with plastic wrap or a clean kitchen towel and let the dough rest for about 30 minutes.
- Set up your frying station with a large, deep pot or deep fryer filled with about 2-3 inches of vegetable oil.
- Heat the oil over medium heat until it reaches 350°F (175°C). Use a candy thermometer or drop a small piece of dough into the oil to check readiness.
- Prepare a plate lined with paper towels to drain the beignets after frying.
- Once the oil is hot, turn the rested dough onto a lightly floured surface and roll it out to about 1/4-inch thickness. Cut into squares, about 2-3 inches wide.
- Carefully drop a few squares of dough into the hot oil, frying in batches to avoid overcrowding.
- Fry for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to flip them halfway through.
- Remove the beignets from the oil and place them on the prepared plate to drain.
- Repeat the frying process with the remaining dough squares.
- While the beignets are still warm, generously dust them with powdered sugar using a sifter or fine mesh strainer.
- Transfer the beignets to a serving platter and enjoy!
