Instructions

  1. In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, ground cinnamon, and nutmeg (if using). Whisk until well blended.
  2. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Gently mix until just combined; a few lumps are fine. The dough should be soft and slightly sticky.
  4. Cover the bowl with plastic wrap or a clean kitchen towel and let the dough rest for about 30 minutes.
  5. Set up your frying station with a large, deep pot or deep fryer filled with about 2-3 inches of vegetable oil.
  6. Heat the oil over medium heat until it reaches 350°F (175°C). Use a candy thermometer or drop a small piece of dough into the oil to check readiness.
  7. Prepare a plate lined with paper towels to drain the beignets after frying.
  8. Once the oil is hot, turn the rested dough onto a lightly floured surface and roll it out to about 1/4-inch thickness. Cut into squares, about 2-3 inches wide.
  9. Carefully drop a few squares of dough into the hot oil, frying in batches to avoid overcrowding.
  10. Fry for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to flip them halfway through.
  11. Remove the beignets from the oil and place them on the prepared plate to drain.
  12. Repeat the frying process with the remaining dough squares.
  13. While the beignets are still warm, generously dust them with powdered sugar using a sifter or fine mesh strainer.
