Ingredients

  • 1 pound ground beef (80/20 blend)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 packet taco seasoning (about 1 ounce)
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro, green onions, tortilla chips

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until browned. Drain off any excess grease.
  2. Add the chopped onion, green bell pepper, and red bell pepper to the skillet. Cook until the vegetables are softened, about 5-7 minutes, stirring frequently.
  3. Stir in the rinsed and drained black beans, drained corn, and diced tomatoes and green chilies (Rotel).
  4. Sprinkle the taco seasoning over the mixture and add the water. Stir well to combine.
  5. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 10-15 minutes, stirring occasionally.
  6. Remove the skillet from the heat and sprinkle the shredded cheddar cheese and Monterey Jack cheese evenly over the top.
  7. Cover the skillet again and let it sit for a few minutes, until the cheese is melted and gooey. Alternatively, broil for 1-2 minutes, watching carefully to prevent burning.
  8. Serve with tortilla chips, as taco filling, over rice, in burrito bowls, or as a salad topping. Add your favorite toppings.
