  • 1 pound ground beef
  • 4 slices of bacon
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup diced onions
  • 1/4 cup pickles, chopped
  • 1/4 cup sour cream
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. In a large skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Remove and drain on paper towels, reserving 1 tablespoon of bacon grease in the skillet.
  2. Add the ground beef to the skillet with the reserved bacon grease. Break apart with a spatula, season with salt and pepper, and cook until browned, about 8-10 minutes. Drain excess fat if necessary.
  3. Crumble the cooked bacon into the skillet with the beef. Stir in the diced onions and cook for an additional 2-3 minutes until softened. Remove from heat and let cool slightly.
  4. Warm the tortillas in a dry skillet over low heat for about 30 seconds on each side or microwave wrapped in a damp paper towel for 20 seconds.
  5. Place one warm tortilla on a clean surface. Add a generous scoop of the beef and bacon mixture in the center.
  6. Sprinkle 1/4 cup of shredded cheddar cheese over the beef mixture. Add shredded lettuce, diced tomatoes, chopped pickles, and a dollop of sour cream, ketchup, and mustard.
  7. Fold the sides of the tortilla inward over the filling, then roll tightly from the bottom, tucking in the sides as you go.
  8. Assemble the remaining burritos with the rest of the filling.
  9. In the same skillet, add a little olive oil and heat over medium heat.
  10. Place the burritos seam-side down in the skillet. Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes.
  11. For extra crispiness, cook for an additional minute on each side, watching closely to prevent burning.
  12. Remove from skillet and let cool for a minute. Slice in half diagonally.
  13. Serve with extra sour cream, ketchup, or mustard on the side. Garnish with fresh herbs like cilantro or green onions if desired.
