  • Everything bagel seasoning (optional)
  • Lemon juice (optional, for avocado)

Instructions

  1. Prepare the Bacon: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange bacon slices on the baking sheet and bake for 15-20 minutes, or until crispy. Transfer to a plate lined with paper towels to drain. Crumble or leave whole.
  2. Prepare the Eggs: Heat olive oil in a non-stick skillet over medium heat. Carefully crack eggs into the skillet. Cook for 2-3 minutes for sunny-side up, or longer to your preference. Season with salt, pepper, and red pepper flakes (optional). Remove from skillet.
  3. Prepare the Avocado: Cut avocado in half, remove pit, and scoop flesh into a bowl. Mash with a fork to desired consistency. Season with salt, pepper, and lemon juice (optional).
  4. Toast the Bread: Toast bread slices to your desired level of doneness.
  5. Assemble the Toast: Spread mashed avocado evenly over toasted bread. Sprinkle crumbled bacon over the avocado. Carefully place a fried egg on top of the bacon. Season with everything bagel seasoning (optional). Serve immediately.
