- 4 slices thick-cut bacon
- 2 large eggs
- 1 ripe avocado
- 2 slices sourdough bread (or your favorite bread)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- Red pepper flakes (optional)
- Everything bagel seasoning (optional)
- Lemon juice (optional, for avocado)
Instructions
- Prepare the Bacon: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange bacon slices on the baking sheet and bake for 15-20 minutes, or until crispy. Transfer to a plate lined with paper towels to drain. Crumble or leave whole.
- Prepare the Eggs: Heat olive oil in a non-stick skillet over medium heat. Carefully crack eggs into the skillet. Cook for 2-3 minutes for sunny-side up, or longer to your preference. Season with salt, pepper, and red pepper flakes (optional). Remove from skillet.
- Prepare the Avocado: Cut avocado in half, remove pit, and scoop flesh into a bowl. Mash with a fork to desired consistency. Season with salt, pepper, and lemon juice (optional).
- Toast the Bread: Toast bread slices to your desired level of doneness.
- Assemble the Toast: Spread mashed avocado evenly over toasted bread. Sprinkle crumbled bacon over the avocado. Carefully place a fried egg on top of the bacon. Season with everything bagel seasoning (optional). Serve immediately.
Notes
- For crispier bacon, ensure slices don’t overlap on the baking sheet.
- Adjust egg cooking time to your preferred doneness.
