  • 1.5 lbs Baby Potatoes (small, uniform size)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Dried Thyme
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Salt (or to taste)
  • Optional: Fresh Parsley, chopped, for garnish

Instructions

  1. Wash the baby potatoes thoroughly. Use a vegetable brush to scrub off any dirt or debris.
  2. Dry the potatoes completely. Spread them out on a clean kitchen towel and pat them dry.
  3. Decide if you need to cut the potatoes. If some are significantly larger than others, cut them in half or even quarters to ensure they cook evenly. Aim for roughly the same size pieces.
  4. In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, dried thyme, black pepper, and salt.
  5. Add the dried potatoes to the bowl.
  6. Toss the potatoes thoroughly to coat them evenly with the oil and spice mixture.
  7. Preheat your air fryer to 400°F (200°C).
  8. Arrange the potatoes in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding.
  9. Air fry for 15-20 minutes, flipping halfway through. Check for doneness after 15 minutes and add more time as needed.
  10. Check for doneness. The potatoes are done when they are fork-tender and golden brown.
  11. Remove the potatoes from the air fryer and transfer them to a serving bowl.
  12. Garnish with fresh parsley (optional).
  13. Serve immediately and enjoy!

Notes

  • Don’t skip the drying step!
  • Don’t overcrowd the air fryer basket. Cook in batches if necessary.
  • Consider adding a little cornstarch. A light dusting of cornstarch (about 1 teaspoon) to the potatoes before air frying can help them crisp up even more. Toss the potatoes with the cornstarch after you’ve tossed them with the oil and spices.
  • Experiment with different seasonings. Feel free to customize the seasonings to your liking. Try adding a pinch of cayenne pepper for a little heat, or some Italian seasoning for a more herbaceous flavor. Rosemary and garlic are also a delicious combination.
  • Shake the basket occasionally. Even if you’re cooking in a single layer, shaking the basket a couple of times during cooking can help ensure even browning.
  • Use a good quality olive oil. The flavor of the olive oil will come through in the finished dish, so use a good quality extra virgin olive oil.
  • Adjust cooking time based on your air fryer. All air fryers are different, so you may need to adjust the cooking time slightly depending on your model. Keep an eye on the potatoes and check them frequently.
  • For extra crispy skin, try increasing the temperature slightly for the last few minutes of cooking. Watch them carefully to prevent burning.
