Instructions

  1. Step 1
    Gather tools (baking sheet, parchment paper, bowl, whisk, knife, spatula, skillet/baking sheet for meat, wrapping). Preheat oven to 350°F (175°C) for eggs. Split all English muffins.
  2. Step 2
    Whisk 12 eggs, ¼ cup milk, ½ tsp salt, and ¼ tsp black pepper; fold in optional mix-ins. Pour onto a parchment-lined 13×18 inch baking sheet. Bake 12-18 min until set. Cool 5-10 min, then cut into 12 portions.
  3. Step 3
    Cook 12 pre-cooked beef sausage patties per package, or pan-fry raw. Alternatively, bake 1 lb beef bacon at 400°F (200°C) for 15-20 min, or pan-fry until crispy. Drain fat. Cool meat completely to room temperature.
  4. Step 4
    Lightly toast split English muffins. Cool completely to room temperature on a wire rack.
  5. Step 5
    Ensure all components (eggs, meat, muffins) are completely cool. Layer each sandwich: bottom muffin half, 1 cheese slice, 1 egg patty, 1 beef sausage patty (or 2 strips beef bacon), top muffin half. The cheese acts as a moisture barrier.
  6. Step 6
    Individually wrap each sandwich tightly in plastic wrap, then in aluminum foil or a freezer-safe zip-top bag. Label with contents and date. Freeze flat for up to 1-2 months.
  7. Step 7
    From frozen: Microwave (remove foil, keep plastic) ~1.5-2 mins (flip); or Oven/Toaster Oven (remove all wrap) 350°F (175°C) 25-40 mins; or Air Fryer (remove all wrap) 300°F (150°C) 15-20 mins. Heat until warmed through. Adjust times from frozen.
